Rich Chocolate Cake Recipe

Ingredients:
  • 1 cup sifted all-purpose flour
  • 1/2 cup sifted unsweetened cocoa powder
  • teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon instant espresso powder
  • 1 1/2 tablespoons hot water
  • 1/2 cup of buttermilk (greek style yogurt can be substituted)
  • 1 1/2 sticks of butter (12 tablespoons)
  • 1 1/3 cups of sugar
  • 1 teaspoon of real vanilla extract
  • 3 eggs

Preheat the oven to 350 degrees. Prepare two 8 inch cake pans by lightly greasing. Place a round piece of parchment paper in the bottom of the cake pan to allow to cake to release neatly from the pan.

In a medium size bowl sift together the flour, cocoa, salt, baking soda and baking powder. Mix the finely ground espresso powder and hot water in a small bowl and stir it into the buttermilk or yogurt.

Using an electric mixure, cream the butter and sugar. Mix in the vanilla. Add the one egg at a time, beating between additions.

Beginning and ending with the flour mixture, alternate adding dry and wet ingredients to the electric mixure. Add a little of each mixture at a time and beat between additions.

The batter will be thick. Scape it into the two prepared cake pans. Make a small shallow divet in the center of the cake so that when the cake rises it is not puffy in the center.

Bake for 50 to 60 minutes or until a toothpick can be inserted and removed cleanly. Allow the cake to cool for at least 5 minutes before inverting. Run a knife around the edges of the cake to loosen it from the pan. Invert, then remove the parchment paper from the surface.

Allow the cake to cool completely before icing with ganache or chocolate frosting.
