Simple Summer Punch (about 8 servings)

  • 1 (six ounce) can frozen lemon juice
  • 1 cup water
  • 1 quart ginger ale
  • 1 tray of ice cubes

Directions: Empty lemon juice into a large pitcher and add water. At serving time, mix in ginger ale and ice cubes. Mix well and serve immediately.

Jamaican Punch (about 25 servings)

  • 1/4 to 1/2 cup simple syrup
  • 4 cups of strong tea
  • 2 cups of lemon juice
  • 1 quart of gin
  • 2 cups of Jamaican Rum
  • 1 teaspoon Angostura bitters
  • 1 quart of chilled ginger ale
  • Juice of one orange

Mix all ingredients, except for ginger ale, in a punch bowl. When ready to serve, add a block of ice, and the ginger ale. Garnish with fruit such as cherries or raspberries, orange slices, and springs of mint.

Hawaiian Luau Punch (about 25 servings)

  • 1 quart of brewed tea
  • 1 pineapple, cubed and frozen
  • 1/2 cup sugar
  • 2 cups Cognac
  • 4 ounces of spiced Rum
  • 2 bottles of dry champagne (chilled)
  • Fresh fruit for garnish

Brew tea, stir in sugar while still hot. Allow to cool. Combine tea, rum and cognac and cubed pineapple and chill. Add champagne just before serving and garnish with fresh fruit such as orange slices and cherries.
