Citrus Marinade for Grilled Vegetables
- 1/2 cup orange juice concentrate, thawed
- 1/2 cup vegetable oil
- Juice from 2 lemons (1/4 cup)
- 2 tablespoon of grated orange peel
- 1/2 teaspoon salt
- 1 clove garlic, finely chopped
Mix all ingredients in a bowl. Marinade the vegetables in half of the mixture and reserve the other half.
The remaining marinade can be brushed on veggies while you're grilling them so that they remain moist and full of flavor!
