- 4 medium potatoes, cut into 1 inch squares
- 1/2 teaspoon salt
- 3 tablespoon of butter
- 1 cup of smoked cheddar cheese, shredded
- 2 to 4 slices of fully cooked bacon, chopped into bits
- 2 medium green onions, diced
Preheat grill for direct heat (grilled items are placed on rack directly over the heat source).
Place potato chunks on a 30 x 18 inch piece of foil. Sprinkle with salt and distribute the butter. Sprinkle with cheese and bacon bits.
Fold the foil into a tight packet, securing all the ingredients. Pierce foil with a fork to allow some steam to exit while cooking.
Place over coals, steam side up, and grill for 45 minutes to an hour. Sprinkle with onions and serve.
