Glazed Carrots (8 Servings)
- 2 dozen carrots
- 6 tablespoon of butter, melted
- 3/4 cup of brown sugar
- 1 1/2 tablespoons of fresh orange rind or 1 tablespoon of dried
Clean and peel 2 dozen carrots. Leave whole or cut into 2 inch pieces.
Place carrots in a pot fitted with a steam basket. Fill pot with enough water to
steam the carrots on the stovetop until tender. As an alternative to steaming, the
carrots may be roasted in oven.
Preheat oven to 350 degrees. Place the carrots in a greased baking dish. Mix all
other ingredients together and pour over carrots. Toss carrots to coat them.
Roast carrots in the oven for about 20 minutes, turn with a spatula a few times to
ensure that they don't stick.
