Gazpacho Recipes: Avocado Gazpacho (2 Servings)
- 1 cup of water
- 1 large avocado
- 2 cups cucumber (peeled and chopped)
- 1 1/2 cups chopped tomatoes
- 1/2 serrano chile (optional)
- 1 large garlic clove
- 1 sprig of mint leaves
- 2 lemons or limes (juiced)
- 1/2 teaspoon salt
Place all of the ingredients in a food processor or blender. Pulse at low speed at first and then on high speed until all of the ingredients are well blended.
For a picnic the gazpacho may be sealed in a thermos or a jar with a tightly fitting lid. It easily pours into a cup.
