How to Make Cupcakes

Any cake recipe can be a cupcake recipe. Fill a cupcake pan with cupcake liners to avoid having to grease the pan.

Pre-heat the oven to 400 degree and bake for 18 to 20 minutes. You can check to see if your cupcakes are done by inserting a toothpick into the center of one of the cupcakes. If it removes without batter on it, then your cupcakes are done. Allow cupcakes to cool completely before icing.

Easy Sweet Cream Cupcakes

Mix flour, baking powder and salt in a bowl and set aside. Beat eggs until they are very thick and gradually add sugar while continuing to beat. Transfer the egg and sugar mixture into a large mixing bowl.

Stir the flour mixture and the heavy whipping cream into the eggs and sugar a little at a time, alternating between dry and wet ingredients.

Dry ingredients should be the first and last ingredients you stir in. Add vanilla and stir. Pour into a cupcake pan lined with cupcake liners. Bake in a 400 degree pre-heated oven for 18 or 20 minutes. Check for doneness before removing from oven.

Coconut Cupcakes

2 cups of flour 1 1/2 cup sugar 3 1/2 teaspoons of baking powder 1 teaspoon of salt 1/2 cup butter, softened 1 cup milk 1 teaspoon almond extract 1 cup shredded coconut (unsweetened, available at organic groceries)

Preheat oven to 400 degrees. Blend flour, sugar, baking powder and salt into a mixing bowl. Add soften butter and almond extract. Beat for about 2 minutes then add eggs and beat for another 2 minutes. Finally add coconut and beat a minute longer until it is well incorporated. Scoop the cupcake batter into a lined cupcake tin and bake for 18 to 20 minutes.

Sugar White Icing Recipe

Mix the sugar, corn syrup and water in a saucepan and boil up to 242 degrees (or until you can spin a long thread of sugar from the spoon).

Pour slowly into the beaten egg whites and beat constantly. Add the vanilla and a few drops of food coloring if desired. Continue to beat the mixture until it is fluffy and will hold its shape.
