Best Chicken Salad Sandwich
- 1 pound chicken (2 cups, grilled, diced chicken)
- salt and pepper
- 1/4 cup barbecue sauce
- 1/4 cup diced red onion
- 1/4 cup diced celery or dill pickles
- 1/4 cup chopped walnuts
- 1/4 cup diced apple
- 1/4 cup real mayonnaise
- 1 teaspoon mustard
Spice the chicken with salt and pepper and marinate with the barbecue sauce. Grill the chicken over charcoal or gas grill until cooked through. Allow to cool and dice into 1/2 inch pieces.
In a large bowl, mix the chicken, onion, celery, walnuts, and apples. Stir in the mayonnaise and mustard and combine well. Season with salt and pepper to taste and keep the chicken salad chilled until ready to serve.
This chicken salad is delicious in a sandwich but also works well on crackers. If taking on a picnic, keep salad in a cooler and make sandwiches fresh so that the bread does not get soggy.
