Easter Treats for Kids - Easter Peeps!

Easter treats means Easter Peeps! What's a creative Easter basket without peeps?

Making Easter peeps can be a new Easter tradition and you can even have the kids help. What's best about homemade Easter peeps is that you can make them any color you like.

So no more searching for those stale marshmallow Easter treats! Blue peeps, pink peeps, whatever you like - make them fresh and delicious.

These homemade Easter treats start with a simple marshmallow recipe.

Easter Peeps Recipes:

Ingredients:

  • powdered sugar for dusting
  • 3 tablespoons gelatin - 3 packets
  • 1/2 cup cold water
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup cold water
  • 1/4 teaspoon salt
  • 2 teaspoons real vanilla extract
  • 1/4 cup cornstarch
  • Non-stick spray
  • Granulated colored sugar (purchased in baking aisle)

Directions:

Spray a 9-inch square pan with cooking spray and dust with a generous layer of powdered sugar.

In an electric mixing bowl, soak the gelatin in 1/2 cup cold of water and set the bowl aside.

Combine the granulated sugar and 1/2 cup of water, salt and corn syrup in a large saucepan.

Cover and cook over medium heat until the sugar is devolved. Uncover and clip a candy thermometer on the pan. Cook for an additional 5 to 7 minutes. When the mixture reaches 240 degree, immediately remove it from the heat.

While the mixer is running, slowly pour the mixture into the mixing bowl with the gelatin.

Beat with an electric mixer until the mixture is soft and has doubled in size, about 15 minutes. Add the vanilla during the last few minutes.

Pour the mixture into the prepared pan to about 1/2 inch thickness. Sprinkle the colored granulated sugar over the top.

Allow the marshmallow to set at least 4 hours or overnight.

Dust a bunny shaped cookie cutter with powdered sugar and gently cut the marshmallows.
