Cheesy Scalloped Potatoes

Ingredients:

  • 4 large baking potatoes
  • 1 cup diced onions
  • 3/4 cup diced country ham, 12 to 16 ounces
  • 2 cups of shredded cheddar cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 4 tablespoons of flour
  • 3 tablespoons mixed herb seasoning, such as Herbs or Provence
  • 1 cup of milk
  • Salt and pepper

Preheat the oven to 375 degrees.

Spread one layer of potatoes into a 9 x 13 buttered casserole dish. You should use about 1/4 of the diced potatoes per layer. Season the potatoes with salt, pepper, and herbs. On top of the potatoes, sprinkle in about 1/2 of the ham and approximately 1/4 of the onions.

Dust the layer with 1 tablespoon of flour. Finish the first layer by spreading 1/2 cup of cheddar cheese over the top.

Repeat the process. Create another layer of potatoes, onions, ham, seasonings, flour and cheese ... until all ingredients are used. Pour the milk over the casserole. Then top the potatoes with the Parmesan cheese. The freshly grated Parmesan makes this a very cheesy scalloped potato recipe!

Cover the casserole dish with foil and bake for about an hour. The scalloped potatoes are done when a toothpick can easily penetrate all layers.

Finally, remove the foil and bake for an additional 10 to 15 minutes. The top layer will be slightly brown and the cheese will be bubbly.
